Properties of Vitamin C
Antioxidant
Free radicals are unstable molecules containing an unpaired electron, which makes them very reactive. They can damage cell membranes, proteins, DNA and other cellular components. Vitamin C acts like an electron donor, neutralising free radicals by stabilising them. Vitamin C is also able to regenerate other antioxidants, such as vitamin E
Immune system support
Vitamin C helps support various cellular functions of the innate and adaptive immune system. It improves the differentiation and proliferation of B and T lymphocytes. This vitamin accumulates in phagocytic cells, such as neutrophils, and helps improve chemotaxis and phagocytosis. It has been demonstrated that vitamin C has an inhibitory effect on the expression of pro-inflammatory cytokines such as interleukin (IL)-6 and tumour necrosis factor alpha (TNF-alpha), allowing adequate regulation of immune responses to help prevent excessive immune reactions
Collagen synthesis
Vitamin C is essential to collagen production. It helps convert pro-collagen into mature collagen, thus strengthening the structure of skin and connective tissue. More specifically, it promotes the hydroxylation and crosslinking of pro-collagen by targeting the two key enzymes in collagen biosynthesis: lysyl and propyl hydroxylase
Reduction in fatigue
Vitamin C is a co-factor required for L-carnitine synthesis. This amino acid is required for the transport of long-chain fatty acids in the mitochondria. This transfer allows the production of ATP which is vital for cellular energy. The role of vitamin C in improved iron absorption and the strengthening of the immune system also helps to reduce the causes of fatigue
Absorption of non-haem iron
During the absorption of food containing non-haem iron, iron is present in Fe3+ (trivalent iron) form which is less well absorbed by the body than haem iron (present in foods of animal origin). Vitamin C helps reduce Fe3+ to bivalent iron (Fe2+), a form that is more soluble and more easily absorbed by the cells in the small intestine

Vitamin C, also known as ascorbic acid, is a water-soluble vitamin. Vitamin C plays many essential roles in the human body due to its antioxidant properties and its role in metabolic functions, such as collagen synthesis and non-haem iron absorption
Its chemical structure consists of a ring with a hydroxyl group (-OH) at position 2 and 3 in the cycle (enol function). It also contains a ketone functional group (-C=O) in position 1 and two alcohol groups, a primary and secondary on carbon 4
